Thanksgiving Tradition - Pilgrim Pie - Machine Shed

Thanksgiving meal prep is in full swing now and you will want to make memories sweet with this delicious pie! Pilgrim Pie is a family recipe submitted for the Machine Shed Cookbook by Chef Jeff Grunder, who’s been with the company for 35 years. This recipe was passed down to Jeff from his mother Rhoda who made the pie every year for Thanksgiving, and before that it was made for the family by his grandmother, Daisy. Jeff has shared the tradition with guests at The Machine Shed Davenport by baking it for them, and now it can become a favorite at your holiday feast. Enjoy and happy holidays!

Ingredients

  • 1 pie crust, unbaked
  • 1 cup pancake syrup
  • 1 cup sugar
  • 2 eggs beaten
  • 1 cup coconut
  • 2 ounces softened butter
  • 1 cup oatmeal, uncooked
  • 1/2 tablespoon salt
  • 1 tablespoon vanilla
  • 3/4 cup pecans, chopped

Directions

  1. Preheat oven to 325˚F.
  2. Cream together the eggs, sugar, then add butter. After mixing for 1-2 minutes add the remainder of the ingredients.
  3. Pour into an uncooked pie shell and cook for about 45 minutes. Serve with whipped cream.
