Cheeseburger Soup - Machine Shed

Nothing quite warms you up during these cold winter days like a hot bowl of homemade soup. For all of our cheeseburger lovers out there, this is the soup for you! This recipe is easy to make, yet one of the tastiest soups you will ever try! Trust us, you will not be disappointed!

Ingredients:

  • 2 fl olive oil
  • 1 large yellow onion
  • 2 lbs ground beef
  • 2 qt 2% milk
  • 1 qt chicken stock
  • 1 qt heavy cream
  • 2.5 lb American cheese
  • 2 oz yellow mustard
  • 2 tsp granulated garlic
  • 1.5 fl corn starch
  • 2.5 fl pickle juice
  • pinch of salt and pepper to taste

  Instruction:

1. Dice the yellow onion and cook in oil until translucent.
2. Add ground beef and continue to cook on high heat, breaking up any large pieces.  Add all seasonings.
3. Add chicken stock, milk, mustard, and heavy cream. Bring to a boil on medium heat.
4. In a separate bowl, mix corn starch and pickle juice to make a slurry.
5. Add American cheese whisking vigorously until smooth, then slurry until desired thickness.
6. Garnish with diced pickles or tomatoes.
