- White frosting (Homemade or store bought)
- Small black sprinkles
Ingredients:
CONFETTI CUPCAKE BATTER
- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 cup granulated sugar
- ½ cup unsalted butter (softened)
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup buttermilk
- 1/2 cup colorful sprinkles (for confetti)
FROSTING
- 1 cup unsalted butter (softened)
- 4 cups powdered sugar
- 2-3 tbsp milk
- 1 tsp vanilla extract
- A pinch of salt
Directions:
CONFETTI CUPCAKE BATTER
- Preheat your oven to 350°F (180°C) and line a cupcake tray with liners.
- In a mixing bowl, combine the flour, baking powder, baking soda, and salt.
- In a separate bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, followed by the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until well combined.
- Gently fold in the colorful sprinkles to create a confetti effect.
- Fill the cupcake liners 2/3 full with the batter.
- Take four of your little balls of foil and put them in each “corner” of the cupcake batter so that they will look like little ghosts.
- Bake for 15-18 minutes or until a toothpick comes out clean.
- Allow the cupcakes to cool completely before frosting
FROSTING
- In a large bowl, beat the softened butter until it’s creamy and smooth.
- Gradually add the powdered sugar, milk, vanilla extract, and a pinch of salt.
- Beat until you have a smooth, fluffy frosting.
- Adjust the consistency with additional milk if needed.
DECORATING
- Frost your confetti cupcakes once the cupcakes have cooled. You can use a piping bag or a spatula to create a ghost-like swirl on top of each cupcake.
- Add ghostly faces by placing two sprinkles on each cupcake for the ghost’s eyes. [Optional: Use black gel food coloring to create a ghostly mouth and additional facial details. Get creative, and make each ghost unique!]
