Here’s what you’ll need:

  • Your favorite cupcake recipe or mix (we included our confetti recipe below)
  • Cupcake liners
  • Cupcake tray
  • Pieces of foil rolled up into small balls
  • White frosting (Homemade or store bought)
  • Small black sprinkles

Ingredients:

CONFETTI CUPCAKE BATTER

  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup granulated sugar
  • ½ cup unsalted butter (softened)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1/2 cup colorful sprinkles (for confetti)

FROSTING

  • 1 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 2-3 tbsp milk
  • 1 tsp vanilla extract
  • A pinch of salt

Directions:

CONFETTI CUPCAKE BATTER

  1. Preheat your oven to 350°F (180°C) and line a cupcake tray with liners.
  2. In a mixing bowl, combine the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, followed by the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until well combined.
  6. Gently fold in the colorful sprinkles to create a confetti effect.
  7. Fill the cupcake liners 2/3 full with the batter.
  8. Take four of your little balls of foil and put them in each “corner” of the cupcake batter so that they will look like little ghosts.
  9. Bake for 15-18 minutes or until a toothpick comes out clean.
  10. Allow the cupcakes to cool completely before frosting

FROSTING

  1. In a large bowl, beat the softened butter until it’s creamy and smooth.
  2. Gradually add the powdered sugar, milk, vanilla extract, and a pinch of salt.
  3. Beat until you have a smooth, fluffy frosting.
  4. Adjust the consistency with additional milk if needed.

DECORATING

  1. Frost your confetti cupcakes once the cupcakes have cooled. You can use a piping bag or a spatula to create a ghost-like swirl on top of each cupcake.
